Fresh Corn Skillet

Three Sisters Cookbook


5 cups fresh uncooked corn kernels (approx. 10 ears)
1 cups chopped onion
1 cups chopped red bell pepper
1 tablespoon minced peeled fresh ginger
4 minced garlic cloves
olive oil flavored cooking spray
2/3 cup chopped fresh cilantro
1 cup red wine vinegar
2 tablespoons minced shallots
1 tablespoon minced seeded jalapeno pepper
4 teaspoons olive oil
1 teaspoon salt
black pepper to taste
Combine the first 5 ingredients. Coat a large skillet with cooking spray and warm over medium-high heat. Add corn mixture and saute until corn begins to brown. Combine the chopped cilantro and the remaining ingredients in an airtight container and shake well. Combine both mixtures, cover and chill. Yield: 8 (3/4 cup) servings Nutrition per serving: calories 130, percent calories from fat 26%, carbohydrates 24.3 g., sodium 93 mg., cholesterol 0 mg.
