Stewart Brings Wide Range of Experience Back to New York

Chef de Cuisine Joseph Stewart has returned to his home state of New York to run the kitchen at the new TS Steakhouse at Turning Stone Resort Casino. The restaurant opens November 14 on the 21st floor of the Turning Stone Tower Hotel, offering beautiful panoramic views of the countryside from the tallest building between Albany and Syracuse.

Chef Joseph, originally from Batavia, (see biography)has come back to New York after serving in kitchens across the country and beyond, most recently as Sous Chef at the St. Regis Hotel and Spa in Aspen, Colorado and Chef de Cuisine at BLT Steak at the Ritz Carlton Hotel and Spa in San Juan, Puerto Rico.

Chef Joseph said, “I chose to come to Turning Stone because of the excitement of opening a new featured restaurant at the Resort. Also, as I drove back and forth to college from Batavia, New York to Rhode Island in the late 1990s, I kept seeing the expansion of Turning Stone and was always really interested in one day working there. Now, everything has come together to bring me closer to where I grew up. It’s perfect timing in my career.”

Featured items on Chef Joseph’s menu at TS Steakhouse include a Mixed Raw Bar Tower, Native Corn and Clam Chowder, influenced by the Oneida Indian culture of “eating the seasons”, Wagyu New York Strip Steak, and a Seven Layer Chocolate Cake. The TS Steakhouse menu also embraces the “Field to Table” concept, featuring fresh goods from local vendors.

Chef Joseph added, “We want the food to surpass the impressiveness of the amazing 360 degree views and leave guests talking about TS Steakhouse and how impressed they were with their dining experience for weeks and months to come.”

Hours of operation for TS Steakhouse are: Dining room, 5 p.m. to 10 p.m. Sunday through Thursday and 5 p.m. to 11 p.m. Friday and Saturday. The lounge remains open seven days a week until 2 a.m. with food service until midnight.
